Avocado Lime Shrimp Salad

  • 14 oz cooked jumbo shrimp, chopped
  • 1 1/2 cups tomato, diced
  • 1 cup English cucumber, sliced and halved
  • 4 1/2 oz. avocado, diced
  • 1/4 cup jalapeƱos, seeded, minced
  • 1/4 cup green onion, chopped
  • 2 Tbsp. lime juice
  • 1 tsp olive oil
  • 1 Tbsp cilantro, chopped
  • Salt and pepper, to taste

Method

    1. In a small bowl combine green onion, lime juice, olive oil, and salt and pepper. Let marinate for ~5 minutes.
    2. In a large bowl combine chopped shrimp, avocado, tomato, cucumber and jalapeno.
    3. Combine all ingredients together, add cilantro and gently toss.
    4. Enjoy!
