Barbecue Chicken with Grilled Vegetables

  • • 18 oz. raw boneless, skinless chicken breast
  • • 2 tsp. BBQ seasoning
  • • 1 cup zucchini, sliced
  • • 1 cup red bell pepper, sliced
  • • 1 cup yellow bell pepper, sliced
  • • 1/4 cup light Italian dressing


    1. Preheat grill to medium-high.
    2. Pound chicken breasts to even thickness, and season each side with BBQ seasoning.
    3. Place vegetables in a lightly greased grill basket.
    4. Transfer chicken breast and the grill basket to grill.
    5. Grill chicken until internal temperature of 165⁰F. is reach, about 4 to 6 minutes per side depending on the thickness, and 10 minutes for the vegetables, or until al dente, tossing occasionally.
    6. Place vegetables in a large bowl and add dressing; toss to coat.
    7. Split vegetables onto two plates and place one serving of chicken on each plate.
