Broccoli Cheddar Soup

  • • 6 cups broccoli florets (12 Fresh)
  • • 1/2 cup yellow onion, diced (1 Snack)
  • • 2 garlic cloves, minced
  • • 1/4 tsp salt
  • • 1/4 tsp black pepper
  • • 1/4 tsp nutmeg
  • • 4 cups low-sodium vegetable broth (12 Extras)
  • • 1 Tbsp water
  • • 1/2 cup plain Greek yogurt (1/3 Lean-1)
  • • 1/4 cup warm water
  • • 1 2/3 cup shredded reduced-fat cheddar cheese (1 2/3 Lean-0)

Method

    1. Add broccoli, onion, garlic, salt, pepper, nutmeg & vegetable broth to slow cooker. Stir to combine. Cook on low 4-5 hours or high for 2-3 hours.
    2. When cooking is complete, mix together Greek yogurt and warm water. Place on stove top on low heat and mix in cheese until melted and creamy.
    3. Whisk into slow cooker, then ladle and serve.
