Broiled Lemon Garlic Lamb

  • Cooking spray
  • 1.5 lbs. raw, boneless lamb chop loin
  • 1 tsp. garlic, minced
  • 1 tsp. dried rosemary
  • ½ tsp. ground black pepper
  • 1 cup portabella mushroom caps
  • 3 cups raw spinach
  • ½ cup cherry tomatoes, halved

Method

    Lamb:

    1. Preheat broiler.
    2. Trim all visible fat from lamb.
    3. Spray rack in a broiler pan with non-stick cooking spray.
    4. In a small bowl, combine garlic, rosemary, and black pepper.
    5. Place lamb on prepared rack and cover with half of garlic mixture.
    6. Broil 4 minutes, 4” from heat; turn lamb over.
    7. Cover lamb with remaining garlic mixture.
    8. Broil 2-4 minutes, or until cooked through.


    Vegetables:

    1. Spray medium skillet with non-stick cooking spray and heat over medium heat.
    2. Add mushrooms and sauté.
    3. Once mushrooms are near desired tenderness, add spinach and tomatoes and sauté an additional 2-3 minutes.
    4. Serve lamb over vegetables.
