Chicken & Chorizo Paella
- 4 tsp. canola oil
- 2 oz. seitan chorizo crumbles
- 1½ lbs. boneless, skinless chicken breasts, diced into bite-sized pieces.
- 1 tsp. garlic, minced
- 1 scallion, trimmed and minced
- 4 cups cauliflower rice
- Pinch of saffron (optional)
- 1 cup tomatoes, diced
- 1 cup green beans, cut into 1/4-inch pieces
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper
Method
1. In a large skillet, heat oil on medium-high and cook the seitan chorizo crumbles and chicken until brown, but not cooked through.
2. Add the garlic and scallions and sweat for about 2 minutes.
3. Add the cauliflower rice, saffron, tomatoes, and green beans to the paella. Cook for about 10 minutes, season with salt and pepper, and serve hot.
