Chicken & Chorizo Paella

  • 4 tsp. canola oil
  • 2 oz. seitan chorizo crumbles
  • 1½ lbs. boneless, skinless chicken breasts, diced into bite-sized pieces.
  • 1 tsp. garlic, minced
  • 1 scallion, trimmed and minced
  • 4 cups cauliflower rice
  • Pinch of saffron (optional)
  • 1 cup tomatoes, diced
  • 1 cup green beans, cut into 1/4-inch pieces
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper

Method

    1. In a large skillet, heat oil on medium-high and cook the seitan chorizo crumbles and chicken until brown, but not cooked through.
    2. Add the garlic and scallions and sweat for about 2 minutes.
    3. Add the cauliflower rice, saffron, tomatoes, and green beans to the paella. Cook for about 10 minutes, season with salt and pepper, and serve hot.
