  • Ingredients
  • • 2 light Swiss spreadable cheese wedges, softened
  • • 1/2 cup tomato, chopped
  • • 1/2 cup broccoli, chopped
  • • 1/2 cup zucchini, chopped
  • • 1 cup liquid egg substitute
  • • 1/2 cup low-moisture part-time 2% mozzarella cheese
  • • 1/8 tsp. salt
  • • 1/4 tsp. ground black pepper
  • • 1/4 tsp. garlic powder

Method

    Directions
    1. Preheat oven to 375° F.
    2. In a lightly greased skillet, combine spreadable cheese with tomato, broccoli, and zucchini. Stir continuously until cheese has melted. Remove from heat.
    3. Add remaining ingredients to a bowl, and mix in the vegetables until thoroughly combined.
    4. Pour mixture into a small, lightly greased baking dish and bake for 35 minutes, or until center has set. Allow to rest 5-10 minutes before serving.
