Glazed Balsamic Steak Rolls
- Ingredients
- • 1 lb. thinly sliced sirloin
- • Non-stick spray
- • 1/4 tsp. salt
- • 1/2 tsp. pepper
- • 1 Tbsp. rosemary
- • 1 red bell pepper
- • 1 green bell pepper
- • 1 medium zucchini
- • 1 cup leeks
- • 6 oz. white button mushrooms
- For the glaze:
- • 1 clove garlic, minced
- • 2 Tbsp. balsamic vinegar
- • 1 tsp. zero-calorie sweetener
- • 2 sprigs rosemary
- • 1/4 cup beef broth
Method
1. Sprinkle steak slices with salt, pepper, and rosemary. Slice veggies into thin strips.
2. Heat skillet to med-high, & cook veggies until crisp-tender, seasoning with salt and pepper.
3. Place some of the veggie strips on one end of each steak slice. Roll up & secure with tooth-pick. Grill each side for 2 minutes.
For Glaze:
1. Heat saucepan to med-high & spray with cooking spray. Add garlic & cook for 1 minute. Add vinegar, sweetener, & rosemary.
2. Bring to a rapid boil, then reduce heat & simmer uncovered for 5 minutes.
3. Add broth & return to boil. Reduce heat to low & simmer for 15 minutes. Discard rosemary.
4. Drizzle with glaze & serve.
