Grilled Chicken Foil Packets

    1 Serving
  • 1; 8 ounce boneless, skinless chicken breast (should yield 6 oz. cooked)
  • 1/4 pound green beans, tips cut off and washed
  • 1/2 cup sliced zucchini
  • 1/2 cup sliced red pepper
  • 1/4 tsp pepper
  • 1 tsp fresh minced thyme
  • 1/2 tsp salt (optional)
  • 1/2 Tbsp butter
  • Heavy-duty foil
  • Lemon Wedges (optional)

Method

    1. Preheat the grill to medium high heat (about 375°F-400°F)
    2. Flatten chicken breast to 1/2-in. thickness; place on a piece of heavy-duty foil (about 12-in. square). Layer the vegetables over the chicken; sprinkle with pepper, thyme, and salt if desired
    3. Cube up 1/2 Tbsp. butter and place on top of vegetable layer
    4. Fold foil around chicken and vegetables and seal tightly. Place on preheated grill for about 30 minutes or until chicken juices run clear. If desired, serve with lemon wedges.
