Shrimp Avocado Cucumber Bites

  • Ingredients
  • • 2 tsp. olive oil
  • • 1 Tbsp. creole seasoning
  • • 21 oz. shrimp, cooked (approx. 35-40 pieces)
  • • 6 oz. avocado
  • • 1/4 cup green onion, diced
  • • 2 Tbsp. fresh cilantro, finely chopped
  • • 2 tsp. lime juice
  • • 1/4 tsp. salt
  • • 2 English cucumbers, sliced into 35-40 slices

Method

    Directions
    1. In a bowl, add avocado, lime juice, half of the cilantro, and salt. Mix until creamy and set aside.
    2. In a separate bowl combine the oil, creole seasoning and shrimp. Toss until shrimp are coated in mixture and transfer to a preheated skillet over medium-high heat. Cook for approximately 2-3 minutes per side, or until golden brown. Remove from heat
    3. Assemble bites by evenly topping each slice of cucumber with avocado sauce and shrimp, and garnish with remaining cilantro.
    4. Serve and enjoy, or cover and refrigerate up to 4 hours before serving.
