Spaghetti Squash Chow Mein

  • • 1/2 cup low-sodium soy sauce
  • • 2 cloves garlic, minced
  • • 1 packet zero-calorie sweetener
  • • 2 tsp. ginger, grated
  • • 1/2 tsp. white pepper
  • • 2 Tbsp. olive oil
  • • 1/4 cup onion, diced
  • • 1 cup celery, sliced
  • • 2 cups green cabbage, shredded
  • • 6 cups spaghetti squash noodles, cooked

Method

    1. In a small bowl whisk together soy sauce, garlic, sweetener, ginger, and pepper. Set aside.
    2. Heat oil in a large skillet over medium-high, and add onion and celery. Sauté for 3-4 minutes, stirring often.
    3. Add cabbage and cook for 1 minute, or until heated through.
    4. Add spaghetti squash noodles and pour sauce mixture over top. Stir until well combined and cook for 4-5 minutes.
    5. Divide into 6 servings and serve immediately.
