Turkey Chili

  • • 2 tsp. olive oil
  • • 2 Tbsp. onion, diced onion
  • • 2 garlic cloves, minced
  • • 1 medium red bell pepper, diced
  • • 1 medium green bell pepper, diced
  • • 1 jalapeno pepper, diced
  • • 1 ½ lbs. 99% lean ground turkey
  • • 1 – 28oz. can diced tomatoes
  • • ½ cup kidney beans
  • • 1 cup water
  • • 1 ½ tsp. ground cumin
  • • 2 tsp. chili powder
  • • ¼ tsp. crushed red pepper flakes
  • TOPPINGS
  • • ½ cup scallions, chopped
  • • 6 oz. avocado, diced
  • • ½ cup low-fat, plain Greek yogurt
  • • ¾ cup low-fat shredded cheddar cheese

Method

    1. Heat a large soup pot over medium-high heat, add olive oil, onions, garlic and peppers
    and sauté for 4-5 minutes or until tender. Add ground turkey and cook until turkey
    browns and is no longer pink.
    2. Pour in the tomatoes, kidney beans, water, cumin, chili powder, and red pepper flakes;
    mix until well blended. Cover, and simmer on low for about 20 minutes.
    Serve with scallions, avocado, Greek yogurt, and shredded cheddar
    cheese. Divide topping amount by 4 to add per serving!
