Deviled Eggs – Two Ways

  • Traditional Deviled Eggs
  • 12 whole eggs
  • 2 Tbsp. light mayonnaise
  • 1/2 tsp salt
  • 3/4 tsp pepper
  • 4 tsp spicy brown mustard
  • 1 tsp paprika
  • Avocado Deviled Eggs
  • 12 whole eggs
  • 1 avocado
  • 1/4 cup dried red onion
  • 1/4 cup nonfat Greek yogurt
  • 1 Tbsp. lime juice
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • Salt to taste
  • Paprika for garnish

Method

    Traditional Deviled Eggs
    1. Hard boil and peel eggs.
    2. Cut eggs in half, remove yolks and place into a bowl.
    3. Put egg whites on to plate.
    4. Mix yolks with mayo, mustard, salt and pepper.
    5. Fill each egg white with 1/24 of the yolk mixture.
    6. Sprinkle paprika on top

    Avocado Deviled Eggs
    1. Cut boiled eggs in half lengthwise
    2. Scoop out yolks and mash them together with avocado
    3. Put mixture back into egg whites
    4. Garnish with paprika
    Per Serving: 1 Lean-0 | 1/4 Healthy Fat | 1/4 Extra
