  • 1 tsp olive oil, divided
  • 1/2 cup sliced jalapeño
  • 1/2 cup diced tomato
  • 1/2 cup diced bell pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp hot pepper sauce
  • 2 cups liquid egg substitute
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 1½-oz sliced avocado
  • 1/2 cup fresh cilantro

Method

    1. Heat 1/2 tsp olive oil in skillet over medium heat. Add jalapenos, tomato, bell pepper, garlic powder, onion powder, and hot pepper sauce, sauté for 5-7 minutes.
    2. Meanwhile, whisk liquid egg substitute with salt and pepper in a medium bowl.
    3. In a separate skillet, heat remaining 1/2 tsp olive oil over medium heat. Add egg mixture to olive oil, and sauté, stirring frequently to create scramble, until cooked.
    4. Serve eggs topped with sautéed vegetables, avocado, and fresh cilantro.
