Turkey and Zucchini Noodle Soup

  • 1 cup celery
  • 1 tsp Sage
  • 1 tsp Parsley
  • 1 tsp Thyme
  • 2 tsp Olive oil
  • 4 cups low sodium chicken broth
  • 12 ounces of diced turkey
  • 2 cups Zucchini noodles
  • Dash of Pepper

Method

    1. Chop up the celery into ½ inch pieces
    2. Heat olive oil in a large sauté pan and sauté the celery for 3 minutes. Add sage, parsley, and thyme and cook for one minute longer
    3. Add the low sodium broth and cook for 30 minutes on low heat
    4. Add diced turkey and let cook for 10 minutes
    5. Add zucchini noodles and let simmer for 20 minutes or until noodles are al dente.
    6. Season to taste with black pepper.
